As “The Destination” venue south of Melbourne, Red Hill Epicurean aspires to be an industry leader, providing an innovative and creative food, wine and retail experience on the Mornington Peninsula. The RHE offers unparalleled quality, service and choice to a discerning and diverse food and wine market.

Red Hill Epicurean is thus far without precedent on the Peninsula and the product has distinctive unique appeal. It is a destination place above all others in the area, catering for large volumes of “walk in” guests, groups and functions. Customers are able to enjoy a wide variety of food and local beverage products. The food and service is well above the levels currently offered by other venues in the district. As a one stop shop guests are able to discover, sample and purchase the largest range of wines currently available at any wine room. Its educational approach to wine retail is backed up by solid advice from thoughtful, trained staff.

We are seeking a motivated, driven, and passionate BDM to oversee our beverage department. Primarily, The BDM role will focus on the following areas:

  1. management and growing our Cellar Door sales in line with the new direction set out by the Directors, elevation the wine store experience to a new level
  2. formation and coordination of a dynamic on line wine store
  3. providing innovation and coordination of all on-premise beverage products including mentoring support to floor staff

Our BDM must be a dynamic and versatile team member demonstrating a team approach and culture at all times. They will be someone who can handle multiple tasks at one time and be able to work across multiple platforms. They demonstrate a real a passion and enthusiasm for retail and direct to consumer sales. The candidate must also show an ability to work autonomously and responsibly with limited support if needed and when necessary.

Core Skills

•Extensive wine knowledge, particularly in relation to local brands and terroir

•Demonstrates an ability to take on board and believe in our brand including embracing the principles the local and regional producers and how this influences our wines and brand perception

• Great communication skills both verbally and technically with a presentable and enthusiastic personality essential for a successful retail channel.

• Excellent computer skills, record keeping, data capture and general overall management experience is necessary.

• Function and events co ordination experience will be viewed favourably.

Core Responsibilities

•Promoting the sale of all wine and beverage products throughout the venue at all times.

•Maintain a high standard in presentation, cleanliness and neatness of the cellar door and surrounds.

•Oversee the operation of all beverage packages for function and event bookings and execution, ensuring appropriate margins are met

•Handle all elements of operation in the Cellar Door that will include sales, dispatch, rosters, reporting, stock control, expanding our Direct to Consumer business and budgets.

Key Functions

•Implementation and maintenance stock control systems (i.e. Purchase orders and stock takes included)

•Establishment and maintenance of a positive team culture with the front and back of house staff.

•Adequate training and supervision of all restaurant staff to maintain and improve our reputation as the leading venue on the Peninsula to experience and purchase wine.

•Rostering of support staff to effectively meet the needs of the business on each day.

•Implementation and maintenance of safety practices and procedures.

•Implementation and maintenance of cleanliness routines and systems throughout the restaurant.

•Involvement in weekly management team meetings.

•Full commitment to maximizing the revenue potential of the venue at all times, extending your hours to suit.

•Monitoring and reducing wastage of all stock items.

•Assist at all times with function sales opportunities willingly and promptly.

Hours and Salary

The position is full time and will involve weekend and public holiday work. Hours will be based around the needs of the business and expect that the BDM will be hands on in oversee the operation of the Cellar Door / Wine Shop at peak visitor times.

A base salary will be discussed in person, based on experience and satisfaction of the above criteria. In addition a generous bonus scheme will apply for the right candidate.
