Phillip Island Nature Parks is one of Australia’s most popular wildlife attractions, incorporating the Penguin Parade, Koala Conservation Centre, historic Churchill Island and the Nobbies Centre.

We are seeking a dedicated Food & Beverage Manager to over-see the day-to-day operations of multiple outlets throughout the Nature Park. The successful candidate will be fully competent in Food and Beverage management with business acumen to match.

In this hands on role you lead by example with your passion for providing superior customer service in an inspiring natural environment with unique wildlife attractions.

Key areas of work include:
•Preparation and ongoing management of the department’s Annual Budget and Business Plan
•Oversee rostering and the necessary staff procurement
•Workforce planning, training & development and people management to maintain best practices in a team work environment
•Policies and procedures implementation and review
•Monitoring and reporting on stock control, stock take, cash transactions and product trend analysis
•Developing and maintaining effective supplier relationships, including contractual agreements
•Development of function/incentive group business and working with internal departments to design packages for international and domestic markets
•Menu costing and design to meet various market needs and seasonal trend, while attaining appropriate costing margins
•Recommend and implement strategic growth strategies across the key attractions.

For success in this role you will have:
•Recognised professional qualifications in hospitality or a qualified chef
•Minimum of 5 years demonstrated experience in a similar management role with comparable scale and multiple venues
•Operationally managed a food and beverage business in the tourism industry
•Function and event experience including demonstrated growth
•Demonstrated ability to manage budgets, business plans, cost control and wages
•High level of communication, negotiation and analytical skills
•Demonstrated outstanding customer service and presentation skills
•Capacity to manage numerous tasks and to prioritise workload
•Capable of working autonomously and in a team environment
•Sound understanding of Food Act, Liquor licensing including occupational health and requirements
