RACV Cape Schanck Resort is situated on the south-eastern tip of the beautiful Mornington Peninsula approximately 90 mins drive south east of Melbourne.

The current Resort comprises of an 86 bedroom Resort Hotel with a choice of accommodation made up of spectacular Ocean View rooms and Villas. The Resort also offers an 18 hole Robert Trent Jones Jr designed championship Golf Course including extensive practise facilities and stunning Driving Range. Dining options include our award winning Restaurant and Golfers Lounge Cafe as well as in room dining options. There are also extensive Conference facilities with dedicated meeting and wedding spaces available on site. Leisure facilities include an outdoor heated swimming pool, sauna, games room, gym and a 4k walking/running track.

The Resort is set for a major re-development this year which will see substantial additional accommodation and Resort facilities constructed. We are now starting to build our key management team, and as such a vacancy has arisen for an experienced Food & Beverage Manager to oversee the busy Food and Beverage department.

In this role you will be responsible for the effectively planning, managing and operating the Food & Beverage outlets at the resort. The position involves the day to day functions required to ensure the consistent delivery of high quality service to members and guests. The areas of responsibility include the following; Restaurant & Lounge, Golfers Lounge & Bar, In Room Dining Service and Conference & Events Operations. This role will assist the Resort Manager in planning the future direction of F&B operations to generate increased business opportunities for the RACV Cape Schanck Resort.

Reporting directly to the Resort Manager, your key responsibilities will include;

  • Overall management of the food and beverage department, ensuring the smooth daily operation of all aspects of the department by managing all financial, human and other resources to meet agreed objectives
  • Managing the food and beverage operations with a ‘hands on approach’ providing exceptional advice and direction to staff
  • Exploring development opportunities for new products relating to food and beverage which encourages increased attendance and revenue for the resort
  • Ensuring that all members of the team are engaged and trained in order to meet their role requirements
  • Preparing the annual Food and Beverage business plan, taking into account both capital and operating requirements.

Relevant experience and expertise at a food and beverage management level will assist you in securing this exciting role. Critical to your success in this position will be your knowledge of service procedures, operational and financial reporting, revenue generation and cost control. You will be an excellent communicator and negotiator with the ability to motivate others and operate effectively in a fast paced environment.

This role will play a critical part in laying the foundations for the future successful operation of the resort, previous experience with pre-opening will be highly advantageous.
