Situated at the gateway to the stunning Mornington Peninsula and nestled amongst 3 acres of stunning landscaped gardens, our property combines the charm of an historic homestead (circa 1878) which houses the hotel’s restaurant Eighteen78, 53 modern accommodation rooms, and conference & function facilities.

The responsibilities include:

Assist in leading and inspiring our small kitchen team in a hands-on manner, ensuring consistent product quality and high standards of internal & external guest satisfaction

Assist in implementing innovative dish design incorporating local products

Active involvement in the property marketing campaigns & strategies

Assist in leading & maintaining a safe work place

Assist in maintaining safety & hygiene standards of the kitchen & equipment

Assist in the food production for all areas of the property including but not limited to;

  • Breakfast @ Eighteen78
  • Eighteen78
  • IRD @ Brooklands
  • Conferences & Events @ Brooklands
  • Eighteen78 @ Home
  • Pantry @ Brooklands

The ideal candidates will possess the following qualities:

Willingness to grow, develop & learn in an ever evolving team environment.

Previous experience in a Commis/Demi Chef role at a similar standard

Trade qualifications – Commercial Cookery, Food Handers Supervisor

Understanding and proven track record in working in a positive team environment

Respectful and positive attitude that is experienced in working in a diverse & dynamic work place

Can bring Innovation, enthusiasm and passion to a strong Cultural environment

Flexible work ethic
